You need to be directly behind them and facing their back, then just hit RB. It takes a bit of practice to get used to the exact angle you need to be at, due to the camera not always being behind you. Ok, firstly not ALL enemies can be backstabbed, they have to be humanoid. The skellies in the Undead Burg can be so that is a good place to start

The system isn't perfext but it's better than the instant backstabs of DS1. Sometimes there's a bit of suction to backstabs but that's usually with rapiers and a bit of latency.
